Spring Vegetable Salad with Chicken and Buttermilk-Herb Dressing

Ingredients

  • 3/4 cup buttermilk
  • 1/2 cup mayo
  • 2 1/2 tbsp. lemon juice
  • 1 tbsp. dried dill
  • 1 tbsp. dried tarragon
  • 1 tsp salt
  • 4 cups chopped romaine
  • 3 cups shredded cooked chicken breast
  • 2 cups sliced celery
  • 1 1/2 cups sliced cucumber
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/2 cup toasted sliced almonds

Directions

  1. Whisk buttermilk and mayo in a large bowl until smooth. Whisk in lemon juice, dill, tarragon and salt.

  2. Add romaine, chicken, celery, cucumber, tomatoes and onion to the dressing and toss to coat. Top with almonds.
