Fajita chicken salad

Ingredients

  • 2 tablespoons oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 jalapeño, minced
  • 1 (8 ounce) can roasted mild green chiles
  • pinch of salt and pepper
  • 2 1/2 c diced cooked chicken, cooled
  • 1 1/2 T fajita seasonings
  • 1/2 c avocado mayo
  • juice of 1/2 lime
  • 1/2 c cilantro, roughly chopped

Directions

  1. Place oil in a large saute pan over medium heat. Once hot, add peppers and onion. Cook for about 10 minutes, until the veggies begin to brown.

  2. Add garlic, jalapeño, and green chiles. Sprinkle with salt and pepper and cook for another 3-4 minutes.

  3. Add chicken and fajita seasonings to the pan and cook for another 3 minutes, until the veggies and chicken are coated in the spices.

  4. Remove from heat and place in the fridge to cool for 30 minutes or until completely cool.

  5. Mix the chicken and veggies with mayo, lime juice and cilantro then place in the fridge to cool before eating.
