Tempura Asparagus

Ingredients

  • 1 cup cake flour
  • 1/2 tsp kosher salt
  • 1 cup cold seltzer
  • 1 bunch asparagus, trimmed
  • Vegetable oil, for frying
  • Ponzu sauce, for dipping

Directions

  1. Whisk cake flour and kosher salt. Whisk in seltzer. Dip asparagus in the batter and fry in batches in 360 degree vegetable oil until crisp, about 2 minutes. Remove and drain on a rack; season with salt. Serve with ponzu sauce for dipping.
