Ingredients
- 1 cup cake flour
- 1/2 tsp kosher salt
- 1 cup cold seltzer
- 1 bunch asparagus, trimmed
- Vegetable oil, for frying
- Ponzu sauce, for dipping

Whisk cake flour and kosher salt. Whisk in seltzer. Dip asparagus in the batter and fry in batches in 360 degree vegetable oil until crisp, about 2 minutes. Remove and drain on a rack; season with salt. Serve with ponzu sauce for dipping.
