Whipped Ricotta with Garlic Tomatoes

Ingredients

  • 1 cup cherry tomatoes
  • 3 smashed garlic cloves
  • 1/4 cup olive oil
  • Whipped Ricotta with herbs (see recipe)

Directions

  1. Cook cherry tomatoes and garlic in olive oil over medium-low heat, stirring occasionally, until very soft, about 35 minutes; let cool. Make Whipped Ricotta with Herbs, replacing the herbs with the tomato mixture.
