Creamy Spinach Dip

Ingredients

  • 1 small shallot, sliced
  • 4 cups baby spinach
  • 5 oz. package garlic-and-herb cheese spread
  • 1/4 cup half-and-half
  • Salt and pepper

Directions

  1. Cook shallot in butter in a large nonstick skillet over medium-high heat until tender, 4 minutes. Add baby spinach and cook until wilted and dry, 2 minutes. Let cool, then squeeze dry and finely chop. Mix with cheese spread and half-and-half; season with salt and pepper.
