White Bean Chimichurri Dip

Ingredients

  • 5 garlic cloves, sliced
  • 1/2 cup olive oil
  • 2 15-oz. cans white beans, drained and rinsed
  • 1/2 cup chopped chives
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped parsley
  • 1/4 cup fresh oregano
  • 3 tbsp. white wine vinegar
  • Salt

Directions

  1. Cook garlic in olive oil in a small skillet until softened, 2 minutes; let cool. Puree the garlic and oil in a food processor with beans, cilantro, chives, parsley, oregano, and vinegar; season with salt.
