Garlic Potato Dip

Ingredients

  • 2 medium russet potatoes, peeled and chopped
  • 6 garlic cloves
  • 1/2 cup olive oil
  • 2 tsp white wine vinegar
  • 1/2 cup water
  • Salt and pepper
  • Chives

Directions

  1. Cook potatoes in simmering water with garlic until tender, about 10 minutes. Drain and puree in a food processor with olive oil and vinegar. With the machine running, slowly add water. Season with salt and pepper. Top with chives.
