Ingredients
- 2 medium russet potatoes, peeled and chopped
- 6 garlic cloves
- 1/2 cup olive oil
- 2 tsp white wine vinegar
- 1/2 cup water
- Salt and pepper
- Chives

Cook potatoes in simmering water with garlic until tender, about 10 minutes. Drain and puree in a food processor with olive oil and vinegar. With the machine running, slowly add water. Season with salt and pepper. Top with chives.
