Bacon and Mushroom Dip

Ingredients

  • 4 slices bacon
  • 1 lb. sliced mushrooms
  • 3 garlic cloves, sliced
  • 1/2 cup toasted walnuts
  • 1/4 cup Parmesan
  • 1/4 cup olive oil
  • Salt and pepper
  • Chopped parsley

Directions

  1. Cook bacon in a large nonstick skillet over medium heat, turning, until crisp, 5-7 minutes. Remove to a paper towel-lined plate; let cook, then finely chop. Add mushrooms and garlic to the skillet and cook until softened, about 10 minutes; transfer to a blender and puree with walnuts, Parmesan and olive oil. Stir in all but 1 tbsp. of the chopped bacon and season with salt and pepper. Sprinkle with the reserved bacon and chopped parsley.
