Ingredients
- 3 heads garlic
- Olive oil
- Salt and pepper
- 4 tsp white wine vinegar
- 1 tbsp. Dijon
- 1 soft-boiled egg, peeled
- 1/4 cup olive oil
Directions

Cut the top off garlic to expose the cloves; put on a sheet of foil. Drizzle with olive oil and season with salt and pepper; wrap in the foil. Roast at 350 until very soft, about 1 hour. Let cool; squeeze out the garlic into a food processor and puree with vinegar, Dijon, and egg. With the machine running, slowly add olive oil. Season with salt and pepper.
