Loaded Tzatziki

Ingredients

  • 1/4 cup red onion, finely chopped
  • 1 cup plain Greek yogurt
  • 1/2 Persian cucumber, grated
  • 1/2 garlic clove, grated
  • 1 1/2 tbsp. chopped dill
  • 1 1/2 tbsp. chopped mint
  • 1/4 cup Kalamata olives, chopped
  • 1 tsp red wine vinegar
  • Pinch of red pepper flakes
  • Salt and pepper

Directions

  1. Soak onion in ice water, 10 minutes; drain and pat dry. Mix with Greek yogurt, cucumber, garlic, dill, mint, olives, vinegar and red pepper flakes; season with salt and pepper. Drizzle with olive oil and sprinkle with more red pepper flakes.
