Ingredients
- 2 C whole wheat flour
- 1 C white flour
- 1/2 C bran
- 1/2 C wheat germ
- 1 T brown sugar
- 1/2 t salt
- 1 1/2 t baking soda
- 2 C buttermilk
Directions
-
Preheat oven to 450 degrees F.
-
Stir dry ingredients with wooden spoon until thoroughly mixed.
-
Make a well in the middle and add buttermilk. Stir ingredients just enough to moisten.
-
Turn dough onto floured board and gently work dough with hands (a little less rigorous than kneading) for 1 minute.
-
Shape into round loaf and place in 8-inch round cake pan. Cut and “X” across the top of the dough with a knife.
-
Reduce heat to 350 degrees F. and bake 55-60 minutes.
-
Helpful Hint: Bread is done if it sounds hollow when tapped on the bottom. For a softer crust, wrap bread in a tea towel (dish towel) immediately upon removing from oven.
