Smashed Burgers with Vidalia Onion Jam

Ingredients

  • 1 lb. ground beef
  • 1 lb. ground sirloin
  • 2 tsp kosher salt
  • Canola oil, for grilling
  • 12 slices sharp Cheddar
  • Toasted multi-seed burger buns, butter lettuce and Vidalia Onion Jam (See recipe), to serve

Directions

  1. In a large bowl, gently combine beef, sirloin, and salt. Divide mixture into 6 portions, and shape each portion into a 1-inch-thick patty. Refrigerate for at least 30 minutes.

  2. Place a cast-iron griddle on grill and preheat to medium-high heat. Brush griddle with oil.

  3. Cook patties on griddle, with grill lid closed, until browned, 3 to 5 minutes, smashing each with a spatula half way through cooking time. Turn patties; repeat, and cook until desired doneness, about 2 minutes more for medium. Remove from heat. Top each with 2 slices cheese. Serve burgers on buns with lettuce and Vidalia Onion Jam.
