Spice-Rubbed Parmesan Chicken Breasts with Garlicky Sauteed Spinach

Ingredients

  • 1/4 cup olive oil, plus more for the baking sheet
  • 6 garlic cloves, finely minced
  • 1 1/2 tsp paprika, plus more for sprinkling
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 4 chicken breasts, patted dry
  • 1 1/2 cups finely grated Parmigiano-Reggiano
  • Garlicky Sauteed Spinach (see recipe), for serving

Directions

  1. Preheat the oven to 400. Line a baking sheet with foil and grease the foil with olive oil.

  2. In a small bowl, combine the 1/4 cup oil, garlic, paprika, salt, black pepper and cayenne and rub it all over the chicken. Arrange the chicken on the lined baking sheet. Sprinkle the Parm all over the chicken.

  3. Bake until the cheese starts to turn golden and the chicken is just about finished, 15-17 minutes. Remove the chicken from the oven, crank up the broiler, and broil the chicken until the top is browned and sizzling, 3-4 minutes. Let rest for 5 minutes before serving. Sprinkle with paprika, and serve with garlicky sautéed spinach.
