Ingredients
- 1 large onion
- 1 large potato, scrubbed
- Kosher salt and black pepper
- 2 tbsp. canola oil
- 1 lb. ground beef
- 3 garlic cloves, minced
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 tsp Worcestershire
- 1 egg, beaten
- 1/4 cup fresh bread crumbs
- 3/4 cup ketchup
- 1 carrot, cut into thin coins
- 4 tbsp. butter, melted

Preheat the oven to 450.

Cut four 1/2-inch-thick slices from the center of the onion. Cut four 1/2-inch-thick slices of potato on the bias, so they’re nice and long, and poke them a few times with a fork. Season both sides of the onion and potato with salt and pepper. Heat the oil in a large skillet over medium-low heat, arrange the potatoes and onions in the skillet, and cook until golden and softened, about 5 minutes per side.

In a large bowl, gently combine the beef, garlic, 1 tsp salt, 1/2 tsp black pepper, the paprika, cayenne, Worcestershire, egg and bread crumbs, using your hands, and form the mixture into 4 equal-size patties, about 5 inches in diameter and 3/4 inch thick.

Tear four large sheets of heavy-duty foil. Squirt about 1 tbsp. of ketchup onto the center of each piece of foil and top with a burger patty. Top each patty with a potato slice, followed by an onion slice, and arrange thing slices of carrot all around the burger. Whisk together the melted butter with the remaining 1/2 cup ketchup and pour the mixture evenly over the packets. Fold up and seal the foil packets, place them on a baking sheet, and bake until the potato is cooked through and the burgers are tender and juicy, 20 minutes. Transfer each packet to a plate, cut the packets open, and serve hot.
