Hasselback Fajita Chicken

Ingredients

  • 4 chicken breasts
  • 2 tbsp. olive oil
  • 1 oz. package taco seasoning
  • 1 medium red bell pepper, seeded and thinly sliced
  • 1 cup thinly sliced red onion
  • 1 cup shredded Mexican cheese blend
  • Garnish: chopped fresh cilantro

Directions

  1. Preheat oven to 450. Line a large rimmed baking sheet with foil.

  2. Carefully slice chicken crosswise at 1/2-inch intervals, cutting three-fourths of the way through. Brush with oil, and sprinkle with taco seasoning. Place bell pepper and onion slices in slits in chicken.

  3. Bake for 20 minutes. Sprinkle with cheese and bake until cheese is melted and chicken is cooked through, about 5 minutes more. Garnish with cilantro.
