Ingredients
- 2 tbsp. olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 cups long-grain rice
- 3 cups chicken broth
- 10 oz. can diced tomatoes and green chiles
- 1 1/2 tsp kosher salt
- 1 tsp ground cumin
- 1/4 cup chopped fresh cilantro

In a large saucepan, heat oil over medium-high heat. Add onion; cook until tender, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Add rice; cook, stirring constantly, until toasted, about 3 minutes. Stir in broth, tomatoes, salt and cumin; bring to a boil. Reduce heat to low; cover and cook until liquid is fully absorbed, about 20 minutes. Remove from heat; let stand for 5 minutes. Stir in cilantro with a fork. Serve immediately.
