Ingredients
- 4 chicken cutlets, pounded to 1/2-inch thickness
- 2 1/4 tsp kosher salt, divided
- 1 tsp black pepper, divided
- 2 tsp Dijon
- 4 slices deli ham or prosciutto, halved
- 4 slices mozzarella, halved
- 3 1/2 tbsp. olive oil, divided
- 1/4 cup panko
- 2 tbsp. chopped fresh parsley
- 1 large yellow squash, chopped
- 1 large zucchini, chopped
- 1/4 tsp crushed red pepper
- Garnish: chopped fresh parsley
Directions

Preheat oven to 350. Line a large rimming baking sheet with parchment paper.

Sprinkle chicken with 1 1/4 tsp salt and 1/2 tsp black pepper. Spread 1/2 tsp Dijon onto top of each cutlet. Place 1 slice ham and 1 slice cheese on each piece of chicken. Starting at one short side, roll up chicken. Brush with 1 tbsp. oil, and place on one half of prepared pan.

In a small bowl, stir together panko, parsley, and 1 1/2 tbsp. oil; sprinkle onto chicken.

In a large bowl, stir together squash, zucchini, red pepper, remaining 1 tbsp. oil, remaining 1 tsp salt and remaining 1/2 tsp black pepper. Arrange squash mixture in an even layer on empty side of pan.

Bake until squash is tender and chicken is cooked through, 20 to 25 minutes. Garnish with parsley.
