Ingredients
- 4 ears corn, shucked
- 1/4 cup mayo
- 1/2 tsp lime zest
- 1 tbsp. fresh lime juice
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 3 oz. crumbled Cotija cheese
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika

On a grill pan, cook corn over medium heat until blistered. Let cool slightly; cut corn kernels off cobs.

In a medium bowl, stir together mayo and lime zest and juice until smooth. Fold in corn, onion, cilantro, cheese and pepper. Sprinkle with paprika.
