Grilled Mexican Corn Salad

Ingredients

  • 4 ears corn, shucked
  • 1/4 cup mayo
  • 1/2 tsp lime zest
  • 1 tbsp. fresh lime juice
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 3 oz. crumbled Cotija cheese
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika

Directions

  1. On a grill pan, cook corn over medium heat until blistered. Let cool slightly; cut corn kernels off cobs.

  2. In a medium bowl, stir together mayo and lime zest and juice until smooth. Fold in corn, onion, cilantro, cheese and pepper. Sprinkle with paprika.
