Ingredients
- 2 cups chopped assorted red tomatoes
- 1 cup chopped green tomatoes
- 2 tbsp. chopped red onion
- 1 garlic clove, minced
- 1 tbsp. apple cider vinegar
- 1 tbsp. vegetable oil
- 1/2 tsp kosher salt
- 1/2 tsp fresh thyme leaves

In a medium bowl, stir together all ingredients. Refrigerate until ready to serve; serve with a slotted spoon.
