Ingredients
- 1/2 cup creamy peanut butter
- 1/3 cup light brown sugar
- 1/3 cup clover honey
- 1 large egg
- 2 tbsp. unsalted butter, melted
- 1 1/2 tsp vanilla extract
- 1 tsp kosher salt
- 1/4 tsp ground cinnamon
- 3 1/2 cups old-fashioned oats
- 1/3 cup mini candy-coated chocolate pieces
- 1/4 cup chopped salted peanuts
- 1/4 cup chopped sweetened dried cranberries

Preheat oven to 350. Spray a 13×9-inch baking dish with cooking spray. Line pan with parchment paper, letting excess extend over sides of pan.

In a large bowl, beat peanut butter, brown sugar, honey, egg, melted butter, vanilla, salt and cinnamon with a mixer at medium speed until well combined, 1 to 2 minutes. Stir in oats, chocolate pieces, peanuts and cranberries until well combined. Press mixture into bottom of prepared pan.

Bake until set and edges are lightly browned, 12 to 15 minutes. Let cool completely in pan on a wire rack. Using excess parchment has handles, remove from pan, and cut into bars. Store in an airtight container for up to 5 days.
