Ingredients
- 8 oz. bacon, chopped
- 1 1/4 cups diced cucumber
- 1 cup quartered cherry tomatoes
- 2 tbsp. seasoned rice vinegar
- Salt and black pepper, to taste
- 3 small avocados, peeled, pitted and diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onion
- 4 cups mixed salad greens
Directions

Cook bacon in a large skillet over medium-high heat, stirring occasionally, until evenly browned, about 10 minutes. Drain on paper towels.

Stir together cucumber, tomatoes, rice vinegar, salt and pepper in a bowl. Gently stir bacon, avocados, cilantro and green onion into cucumber mixture. Serve immediately over mixed greens.
