Best Fried Green Tomatoes

Ingredients

  • 4 large green tomatoes
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1/2 cup dried bread crumbs
  • 2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 cups vegetable oil, for frying

Directions

  1. Core and slice tomatoes 1/2 in thick. Discard ends or reserve for another use.

  2. Whisk together eggs and milk in a shallow dish. Put flour in another shallow dish. Mix together cornmeal, bread crumbs, salt and pepper in a third shallow dish. Dip tomatoes in flour to coat, followed by milk and egg mixture. Dredge in bread crumb mixture to coat completely.

  3. Heat oil in a large skillet over medium heat to 350. Working in batches of 4 to 5 slices and making sure they do not touch, fry tomatoes until golden, 1 1/2 to 2 minutes per side. Drain on paper towels. Sprinkle with additional salt and pepper. Keep warm in a 300 degree oven while frying remaining slices.
