Grilled Chicken Salad with Seasonal Fruit

Ingredients

  • 1 1/2 lb. chicken breasts
  • 1/2 cup pecans (halves or pieces)
  • 1/3 cup red wine vinegar
  • 1/3 cup vegetable oil
  • 1/4 cup minced onion
  • 2 tbsp. sugar
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 2 heads Bibb lettuce, torn into pieces
  • 1 cup sliced fresh strawberries
  • 1 mango, cubed or peach, sliced
  • Black pepper

Directions

  1. Preheat grill for high heat. Lightly oil grate. Grill chicken 8 minutes per side, or until cooked through. Remove from heat, let cool, and slice.

  2. Meanwhile, put pecans in a dry skillet over medium-high heat. Cook until fragrant, stirring frequently, about 8 minutes. Remove from heat.

  3. Blend vinegar, oil, onion, sugar, mustard and salt in a blender until smooth.

  4. Arrange lettuce on serving plates. Drizzle each with 1 tbsp. dressing. Top with chicken, fruit, and pecans. Drizzle with remaining dressing and sprinkle with pepper.
