Ingredients
- 1 1/2 lb. chicken breasts
- 1/2 cup pecans (halves or pieces)
- 1/3 cup red wine vinegar
- 1/3 cup vegetable oil
- 1/4 cup minced onion
- 2 tbsp. sugar
- 1/2 tsp dry mustard
- 1/2 tsp salt
- 2 heads Bibb lettuce, torn into pieces
- 1 cup sliced fresh strawberries
- 1 mango, cubed or peach, sliced
- Black pepper

Preheat grill for high heat. Lightly oil grate. Grill chicken 8 minutes per side, or until cooked through. Remove from heat, let cool, and slice.

Meanwhile, put pecans in a dry skillet over medium-high heat. Cook until fragrant, stirring frequently, about 8 minutes. Remove from heat.

Blend vinegar, oil, onion, sugar, mustard and salt in a blender until smooth.

Arrange lettuce on serving plates. Drizzle each with 1 tbsp. dressing. Top with chicken, fruit, and pecans. Drizzle with remaining dressing and sprinkle with pepper.
