Potato Sausage Frittata

Ingredients

  • 1/2 lb. bulk pork sausage
  • 6 bacon strips, diced
  • 1 1/2 cups finely chopped red potatoes
  • 1 medium onion, finely chopped
  • 8 large eggs
  • 2 tsp dried parsley flakes
  • 3/4 tsp salt
  • 1/8 tsp pepper

Directions

  1. Cook sausage until no longer pink. Remove. In same pan, cook bacon. Remove and drain, leaving 2 tbsp. drippings. Saute potatoes and onion.

  2. In a large bowl, whisk the eggs, parsley, salt and pepper.

  3. Return sausage and bacon to the skillet; top with egg mixture.

  4. Cover and cook over low heat until the eggs are almost set, 8-10 minutes. Uncover; broil 6 inches from heat for 2 minutes. Cut into wedges.
