Ingredients
- 8 oz. cavatelli pasta
- 1 tbsp. olive oil
- 1 cup cherry tomatoes, halved
- 4 garlic cloves, thinly sliced
- 8 black garlic cloves, chopped
- 1 cup chopped shishito peppers
- 2 cups Red Wine-Braised Pork (see recipe), shredded
- 1/2 cup torn fresh basil leaves
- 5 tbsp. mayo
- 1 tbsp. sherry vinegar
- 1/4 tsp kosher salt
Directions

Bring a large pot of water to a boil. Cook pasta as directed. Reserve 1 cup of the cooking water, then drain.

Meanwhile, heat oil in a large skillet over medium heat. Add tomatoes, garlic, and black garlic. Cook, stirring, until the tomatoes start to soften, 2-4 minutes. Add peppers; cook, stirring, until tender, about 2 minutes. Stir in the pasta, pork and 1/2 cup cooking water. Cook, stirring gently, until coated, about 2 minutes, adding more cooking water as needed.

Remove from heat and stir in basil, mayo, vinegar and salt. Toss to evenly coat.
