Homemade Noodles, Czech Style

My grandmother brought this recipe over with her from Czechoslovakia in the late 1800’s.

Ingredients
- 2 cups flour
- 3 eggs
- 3 tablespoons water
Directions

Mix ingredients together in a bowl. work into a smooth dough.

Knead on a floured board until smooth and shinny.

Cut into 3 large chunks of dough and place under a bowl in a warm place for 2 or 3 hours. This makes rolling the noodles out much easier.

Roll out, working one at a time with each lump of dough at a time…actually you really need to “pull” out this dough more than roll the dough. Pull out until paper thin for nice thin noodles.

Place on a floured clean sheet on a large table to air dry. Dry in the sun or over a heater or use a fan to dry.

When just almost dry, fold and cut into equal size strips about 4 inches wide (length doesn’t matter). Stack the strips. Cut with a really thin, very sharp knife. Slice these noodles really thin, my mother used to say “like a dogs hair”. She always said that the “Irish like those thick goopy noodles…not us Czechs”.

You can then spread these out and allow to dry completely.

They can be stored in a plastic or glass container in your pantry or even stored in the freezer.

Toss into your homemade chicken soup as needed.
