Grilled Baby Peppers with Walnuts

Ingredients

  • 2 tbsp. olive oil
  • 2 tbsp. chopped parsley
  • 2 tbsp. chopped cilantro
  • 1 tbsp. lemon juice
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • 1 garlic clove, smashed
  • 1 lb. baby bell peppers
  • Olive oil
  • Salt and pepper
  • 1/4 cup chopped toasted walnuts

Directions

  1. Mix olive oil, parsley, cilantro, lemon juice, coriander, paprika, and garlic in a small bowl. Toss bell peppers with olive oil, salt and pepper. Grill over medium-high heat, turning, until charred, 5-8 minutes. Toss with the herb mixture and walnuts; discard the garlic.
