Ingredients
- 2 tbsp. olive oil
- 2 tbsp. chopped parsley
- 2 tbsp. chopped cilantro
- 1 tbsp. lemon juice
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1 garlic clove, smashed
- 1 lb. baby bell peppers
- Olive oil
- Salt and pepper
- 1/4 cup chopped toasted walnuts
Directions

Mix olive oil, parsley, cilantro, lemon juice, coriander, paprika, and garlic in a small bowl. Toss bell peppers with olive oil, salt and pepper. Grill over medium-high heat, turning, until charred, 5-8 minutes. Toss with the herb mixture and walnuts; discard the garlic.
