Crispy Cheddar Potatoes

Ingredients

  • 1 1/2 lbs. small Yukon Gold potatoes
  • 2 tbsp. olive oil
  • 2 garlic cloves, smashed
  • Kosher salt and black pepper
  • Shredded sharp cheddar
  • Chopped chives

Directions

  1. Microwave potatoes, turning halfway through, until tender, 10-12 minutes; let cool slightly. Break into chunks. Toss with olive oil, garlic, salt and pepper. Roast on a baking sheet at 450, stirring once, until browned and crisp, about 30 minutes. Sprinkle with shredded cheddar and chopped chives.
