Ingredients
- 1 1/2 lbs. small Yukon Gold potatoes
- 2 tbsp. olive oil
- 2 garlic cloves, smashed
- Kosher salt and black pepper
- Shredded sharp cheddar
- Chopped chives

Microwave potatoes, turning halfway through, until tender, 10-12 minutes; let cool slightly. Break into chunks. Toss with olive oil, garlic, salt and pepper. Roast on a baking sheet at 450, stirring once, until browned and crisp, about 30 minutes. Sprinkle with shredded cheddar and chopped chives.
