Ingredients
- Kosher salt
- 1 lb. penne
- 1/3 cup mayo
- 3 tbsp. olive oil
- 3 tbsp. red wine vinegar
- 16 oz. jar giardiniera, drained and chopped
- 1 cup diced provolone
- 1 cup diced salami
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- Black pepper
Directions

Bring a large pot of salted water to a boil. Add the pasta and cook as directed for al dente; drain and rinse under cold water.

Whisk the mayo, olive oil and vinegar in a large bowl. Add the pasta, giardiniera, provolone, salami, parsley and basil. Season with salt and pepper and gently toss.
