pork chops with zesty apricots-grilled

Ingredients

  • 4 t + 1 T olive oil
  • 1/4C dark brown sugar
  • 1T garlic powder
  • 1T + 1/2t salt
  • 1T ground pepper
  • 1t dried sage
  • 4 thick pork chops (about 2 lbs)
  • 1 small red onion, diced
  • 6 apricots, pitted and quartered
  • 1T honey
  • 1T fresh lime juice
  • 1/2t lime zest
  • 1/4C fresh, chopped cilantro

Directions

  1. In small bowl stir together 4t oil, brown sugar, garlic powder, 1T salt, pepper & sage

  2. Rub mix on both sides of each chop

  3. Place chops in a resealable plastic bag and refrigerate at least 3 hours

  4. In medium pan heat remaining oil

  5. Saute onion about 2 minutes

  6. Add apricots, honey and lime juice and saute one more minute at reduced heat

  7. Remove from heat and stir in lime zest, cilantro and rest of salt—set aside

  8. Grill chops on medium high heat

  9. Top with apricot mixture and serve
