Roasted Broccoli, Cauliflower and Carrots

Ingredients

  • 2 (12-oz) bags fresh broccoli and cauliflower florets
  • 1 cup chopped carrot (1-inch pieces)
  • 2 tbsp. chopped fresh parsley
  • 2 tbsp. olive oil
  • 1 1/2 tsp kosher salt
  • 1 tsp granulated garlic
  • 1/2 tsp black pepper
  • Garnish: chopped fresh parsley

Directions

  1. Preheat oven to 425. Line a large rimmed baking sheet with foil.

  2. In a large bowl, stir together vegetables, parsley, oil, salt, granulated garlic, and pepper. Spread vegetables in an even layer on prepared pan.

  3. Bake until tender and lightly browned, about 20 minutes. Garnish with parsley.
