Lemon-Spinach Pasta Salad

Ingredients

  • 1 tbsp. olive oil
  • 1 1/2 cups orzo, cooked as directed
  • 1 lemon, zested and juiced
  • 1 garlic clove, minced
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 cups fresh baby spinach
  • Lemon wedges, to serve

Directions

  1. In a large saucepan, heat oil over medium-high heat. Add cooked orzo, lemon zest and juice, garlic, salt and pepper; cook, stirring frequently, until heated through, about 2 minutes. Stir in spinach just until wilted. Serve with lemon wedges.
