Ingredients
- 1 tbsp. olive oil
- 1 1/2 cups orzo, cooked as directed
- 1 lemon, zested and juiced
- 1 garlic clove, minced
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 4 cups fresh baby spinach
- Lemon wedges, to serve

In a large saucepan, heat oil over medium-high heat. Add cooked orzo, lemon zest and juice, garlic, salt and pepper; cook, stirring frequently, until heated through, about 2 minutes. Stir in spinach just until wilted. Serve with lemon wedges.
