Ingredients
- 2 tbsp. olive oil
- 12 oz. apple and Gouda smoked chicken sausage, cut 1/2-inch thick diagonally
- 1 small yellow onion, chopped
- 2 garlic cloves, minced
- 1 lb. fresh broccolini, cut into 1-inch pieces
- 1/4 cup water
- 2 cups cooked long-grain rice
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper
- 1/2 cup shredded Parmesan cheese
- Garnish: chopped fresh parsley, shaved Parmesan
Directions

In a large skillet, heat oil over medium-high heat. Add sausage; cook until browned, about 5 minutes. Add onion and garlic; cook until tender, about 5 minutes. Stir in broccolini and 1/4 cup water; cover and cook until tender, about 5 minutes. Stir in rice, salt, black pepper and red pepper; cook until heated through, about 5 minutes. Stir in cheese. Garnish with parsley and cheese.
