Ingredients
- 6 tbsp. unsalted butter, softened
- 3/4 cup sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 1/4 cup honey, plus more to serve
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp apple pie spice
- 1/2 tsp salt
- 1/2 cup whole milk
- 1/2 cup chopped Gala apple (about 1 small)
- 1/2 cup chopped Granny Smith apple (about 1 small)
- Streusel Topping (see recipe)

eheat oven to 350. Lightly spray 12 muffin cups with cooking spray. Line cups with paper liners.

In a large bowl, beat butter, sugar, and vanilla with a mixer at medium speed until fluffy, 3-4 minutes, stopping to scrape sides of bowl. Add egg, beating until combined. Beat in honey.

In a medium bowl, whisk together flour, baking powder, pie spice and salt. With mixer on low speed, gradually add flour mixture to butter mixture alternately with milk, beginning and ending with flour mixture, beating just until combined after each addition. Fold in apples. Divide batter among prepared muffin cups, filling about three-fourths full. Sprinkle with Streusel Topping.

Bake until a wooden pick inserted in center comes out clean, about 23 minutes. Let cool in pan for 5 minutes. Remove from pan, and let cool completely on a wire rack. Serve with additional honey.
