Ingredients
- 3/4 cup sugar
- 1/4 cup water
- 1/4 tsp kosher salt
- 1 cup heavy whipping cream, room temp
- 1/3 cup maple syrup
- 1 tbsp. unsalted butter, softened
- 1 tsp vanilla extract

In a small heavy-bottomed stainless steel saucepan, bring sugar, 1/4 cup water, and salt to a boil over medium-low heat. (Do not stir). Cook, swirling pan occasionally, until mixture is amber colored, about 25 minutes.

Remove from heat; gradually stir in cream and maple syrup until smooth. Return to heat; cook, stirring occasionally, until mixture registers 225 degrees on a candy thermometer. Remove from heat; whisk in butter and vanilla until smooth. Let cool to room temp before using.
