Spanish Tots with Red Pepper Sauce

Ingredients

  • 1 lb. tots
  • 1 tsp smoked paprika
  • 1/2 cup roasted red peppers
  • 1/4 cup mayo
  • 1/4 cup toasted almonds
  • 1 small garlic clove
  • 1 tsp sherry vinegar
  • Salt and pepper, to taste

Directions

  1. Spread tots on baking sheet and bake at 450 until golden and crisp, 30-35 minutes.

  2. Toss tots with smoked paprika and continue baking until very crisp, 5 more minutes.

  3. For the sauce, puree red peppers with mayo, almonds, garlic, vinegar, salt and pepper.
