Ingredients
- 28 oz. tots
- 4 tbsp. butter
- 2 onions, sliced
- Salt and pepper, to taste
- 2 tsp chopped thyme
- 1 tbsp. flour
- 3/4 cup beef broth
- 1/4 cup Parmesan
- Chopped chives

Spread tots on baking sheet and bake at 450 until golden and crisp, 30-35 minutes.

Meanwhile, heat butter in a large skillet over medium-low heat. Add onions, season with salt and pepper and cook, stirring occasionally, until caramelized, 30-40 minutes. Stir in thyme and flour, then stir in beef broth and simmer until thickened. Add parmesan; broil until melted, 1-2 minutes. Top with chives.
