Barbecue Tot-chos

Ingredients

  • 28 oz. frozen tots
  • 1 tsp chipotle chile powder
  • 2 cups shredded Colby jack
  • 1 cup pulled pork
  • 1/3 cup chipotle barbecue sauce
  • Sour cream
  • Chopped scallions

Directions

  1. Toss tots with chipotle chile powder. Spread tots on baking sheet and bake at 450 until golden and crisp, 30-35 minutes.

  2. Top tots with Colby jack cheese and continue baking until melted, 1 more minute. Warm pork with barbecue sauce; spoon over the tots and top with sour cream and scallions.
