Ingredients
- 1 lb. spaghetti
- 6 slices thick-cut bacon, chopped
- Olive oil
- 1/3 cup Parmesan
- Salt and pepper
- 6 eggs
- Chopped chives
Directions

Cook spaghetti as directed. Drain, reserving 1 cup cooking water.

Meanwhile, saute bacon in olive oil in a large pot over medium-high heat until crisp, 7-9 minutes.

Add the spaghetti, 1/2 cup cooking water and Parmesan to the pot with the bacon. Cook, stirring, until coated, adding more cooking water as needed; season with salt and pepper.

Fry eggs in olive oil in a large nonstick skillet over medium heat until the whites are set, about 4 minutes; season with salt and pepper. Top the pasta with the eggs and chopped chives.
