Simple Smoked Pork Butt with Brown Sugar Barbecue Rub

Ingredients

  • For Brown Sugar Barbecue Rub:
  • 2 tbsp. dark brown sugar
  • 2 tbsp. smoked paprika
  • 1 tsp salt
  • 1 tsp chili powder
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1/2 tsp dry mustard
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/8 tsp cinnamon
  • For Pork:
  • 8 lb. bone-in pork butt or shoulder roast
  • 2 tbsp. yellow mustard
  • Wood chips, for smoking
  • Burger buns, red onions, barbecue sauce, or other desired toppings

Directions

  1. To make barbecue rub, stir together all ingredients in a bowl.

  2. Score pork with a sharp knife, making 1/4-inch-deep slits. Rub mustard all over pork, then rub with brown sugar rub. Wrap with plastic wrap and chill at least 8 hours and up to overnight.

  3. Preheat an outdoor smoker to 250 and add wood chips.

  4. Put pork on rack set over a drip pan. Smoke 10-16 hours, or until cooked through.

  5. Remove pork, wrap in foil, and let rest 1 hour. Shred pork with 2 forks. Serve with buns and desired toppings.
