Ingredients
- For Brown Sugar Barbecue Rub:
- 2 tbsp. dark brown sugar
- 2 tbsp. smoked paprika
- 1 tsp salt
- 1 tsp chili powder
- 3/4 tsp garlic powder
- 3/4 tsp onion powder
- 1/2 tsp dry mustard
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/8 tsp cinnamon
- For Pork:
- 8 lb. bone-in pork butt or shoulder roast
- 2 tbsp. yellow mustard
- Wood chips, for smoking
- Burger buns, red onions, barbecue sauce, or other desired toppings

To make barbecue rub, stir together all ingredients in a bowl.

Score pork with a sharp knife, making 1/4-inch-deep slits. Rub mustard all over pork, then rub with brown sugar rub. Wrap with plastic wrap and chill at least 8 hours and up to overnight.

Preheat an outdoor smoker to 250 and add wood chips.

Put pork on rack set over a drip pan. Smoke 10-16 hours, or until cooked through.

Remove pork, wrap in foil, and let rest 1 hour. Shred pork with 2 forks. Serve with buns and desired toppings.
