Ingredients
- 4 large zucchini
- 1/4 cup butter
- 3 garlic cloves, minced
- 1 1/2 tbsp. chopped fresh parsley
- Olive oil
- Salt and black pepper
- 1 cup shredded Parmesan

Preheat a grill to medium-high heat. Slice zucchini lengthwise into 1/2-inch-thick planks. Stir together butter, garlic, and parsley in a small bow. Brush each side of planks with olive oil; sprinkle with salt and black pepper. Grill 2 to 3 minutes. Flip and spread with butter mixture, then sprinkle with Parmesan. Grill until cheese has melted and zucchini is tender, 2-3 minutes more.
