Garlic-Parmesan Zucchini

Ingredients

  • 4 large zucchini
  • 1/4 cup butter
  • 3 garlic cloves, minced
  • 1 1/2 tbsp. chopped fresh parsley
  • Olive oil
  • Salt and black pepper
  • 1 cup shredded Parmesan

Directions

  1. Preheat a grill to medium-high heat. Slice zucchini lengthwise into 1/2-inch-thick planks. Stir together butter, garlic, and parsley in a small bow. Brush each side of planks with olive oil; sprinkle with salt and black pepper. Grill 2 to 3 minutes. Flip and spread with butter mixture, then sprinkle with Parmesan. Grill until cheese has melted and zucchini is tender, 2-3 minutes more.
