Ingredients
- 1 1/2 lb. ground beef
- 1/3 cup fresh bread crumbs
- 1/3 cup finely chopped onion
- 1 egg, lightly beaten
- 1 egg yolk
- 1 tsp salt
- 1 tsp black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup ketchup
- 1/4 cup packed brown sugar
- 2 tsp yellow mustard

Preheat oven to 350. Line a 10×15-inch baking pan with foil.

Mix together beef, breadcrumbs, onion, egg, egg yolk, salt and pepper in a large bowl. Pat meat mixture into a 10×12-inch rectangle on wax paper. Sprinkle cheese over meat, leaving a 3/4-inch border around edges. Starting with a long end, roll up jelly-roll style. Pinch ends and seam together to enclose. Transfer to prepared baking pan; bake 35 minutes.

Stir together ketchup, brown sugar and mustard in a small bowl; spread on meatloaf. Continue baking 25 minutes more or until cooked through. Tent lightly with foil and let stand 10 minutes before slicing.
