Ingredients
- 3 eggs
- 10 oz. package frozen chopped spinach, thawed and drained well
- 1 cup cottage cheese
- 8 oz. pkg. shredded cheddar cheese
- 2 roma tomatoes, chopped
- 3 tbsp. flour
- 2 tbsp. butter, melted
- 1/8 tsp salt
- Chopped fresh parsley
- Pita bread rounds

Preheat oven to 350.

Lightly beat eggs with a fork in a large bowl. Stir in spinach, cottage cheese, cheddar, tomatoes, flour, butter, and salt until combined. Spread into a 2-qt. baking dish.

Bake 30-35 minutes or until slightly set, edges are bubbly and cooked through. Cool slightly before topping with parsley. Serve with pita bread.
