Zucchini Apple Bread

Ingredients

  • 4 cups all-purpose flour
  • 3 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 5 large eggs, room temp
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 cups shredded zucchini
  • 1 1/2 cups chopped pecans
  • 1 cup grated peeled apples

Directions

  1. In a large bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. In a large bowl, beat the eggs until frothy. Add the oil, sugars, and vanilla; beat until blended. Stir into the dry ingredients just until moistened. Fold in the zucchini, pecans and apples.

  2. Transfer to 3 greased 8×4-inch loaf pans. Bake at 350 until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool loaves for 10 minutes before moving from pans to wire racks to cool completely.
