Ingredients
- 1 tbsp. olive oil
- 1/4 cup chopped shallot
- 11 oz. baby spinach
- 2 tsp fresh dill, chopped
- 2 tsp fresh parsley, chopped
- 1 garlic clove, grated
- 1/4 tsp black pepper
- 1/2 cup ricotta
- 6 tbsp. crumbled feta
Directions

Heat olive oil in a large nonstick pan over medium-high heat. Add shallot and cook, stirring often, until softened, about 1 minute. Add spinach in batches and cook, stirring, until wilted, 3-5 minutes. Stir in dill, parsley, garlic and black pepper. Cook, stirring, for 1 minute. Transfer the mixture to a large bowl. Stir in ricotta and feta.
