Ingredients
- Spanakopita filling (see recipe)
- 8 slices of whole-wheat sandwich bread
- 4 slices provolone cheese
- 1 tbsp. butter
- 1 1/2 tsp olive oil

Divide the spanakopita filling among bread. Top each with a slice of provolone and another slice of bread. Cook the sandwiches, two at a time, in a large nonstick skillet with butter and olive oil over medium heat until the bread is toasted and the cheese is melted.
