Spanakopita Sandwich

Ingredients

  • Spanakopita filling (see recipe)
  • 8 slices of whole-wheat sandwich bread
  • 4 slices provolone cheese
  • 1 tbsp. butter
  • 1 1/2 tsp olive oil

Directions

  1. Divide the spanakopita filling among bread. Top each with a slice of provolone and another slice of bread. Cook the sandwiches, two at a time, in a large nonstick skillet with butter and olive oil over medium heat until the bread is toasted and the cheese is melted.
