Ingredients
- 2 large red bell peppers
- 1 tbsp. olive oil
- 1/4 tsp salt
- Spanakopita filling (see recipe)
- 2 tbsp. shredded mozzarella
Directions

Cut peppers in half lengthwise. Remove seeds and rub with olive oil and sprinkle with salt. Stuff with the spanakopita filling and top each with mozzarella. Bake at 400 until hot, about 35 minutes.
