Shaved Brussels Sprouts with Lemon-Chile Vinaigrette

Ingredients

  • 1 tsp grated lemon zest
  • 2 tbsp. lemon juice
  • 1 tbsp. honey
  • 1/2 tsp crushed red pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1 1/4 lbs. Brussels sprouts, trimmed
  • 1 cup very thinly sliced red onion
  • 1/2 cup chopped hazelnuts, toasted

Directions

  1. Combine lemon zest, lemon juice, honey, crushed red pepper, salt and pepper in a large bowl. Whisking constantly, slowly drizzle in oil until combined.

  2. Shred Brussels sprouts in a food processor fitted with the slicing disk. Transfer to the bowl with the dressing, along with onion and hazelnuts; gently toss to combine.
