Ingredients

  • Sherry Dijon:
  • 1/2 cup olive oil
  • 1/4 cup sherry vinegar
  • 1 tsp minced garlic
  • 1 tsp Dijon
  • 3/4 tsp salt
  • Fennel Dill:
  • 1/2 cup olive oil
  • 1/4 cup white-wine vinegar
  • 1 tsp minced garlic
  • 1 tsp minced fresh dill or fennel fronds
  • 1/2 tsp toasted crushed fennel seeds
  • 3/4 tsp salt
  • Maple Balsamic:
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tsp minced shallot
  • 1 tsp pure maple syrup
  • 3/4 tsp salt
  • Sesame Ginger:
  • 1/2 cup grapeseed oil
  • 1/4 cup rice vinegar
  • 2 tsp minced scallions
  • 1 tsp minced fresh ginger
  • 1 tsp sesame oil
  • 1 tsp honey
  • 3/4 tsp salt
  • Cumin Lime:
  • 1/2 cup sunflower oil
  • 1/4 cup lime juice
  • 2 tsp minced shallot
  • 1/2 tsp toasted crushed cumin seeds
  • 3/4 tsp salt
  • Olive Orange:
  • 1/2 cup olive oil
  • 1/4 cup orange juice
  • 2 tsp minced scallions
  • 1 tsp minced pitted Kalamata olives
  • 3/4 tsp salt

Directions

  1. Pour 1/2 cup oil into a mason jar. Add 1/4 cup vinegar or citrus juice, 1-2 tsp minced garlic, ginger, scallion or shallot, 1/2 to 3 tsp flavoring (see combos above) and 3/4 tsp salt. Shake it up and you’re done!
