Ingredients
- Sherry Dijon:
- 1/2 cup olive oil
- 1/4 cup sherry vinegar
- 1 tsp minced garlic
- 1 tsp Dijon
- 3/4 tsp salt
- Fennel Dill:
- 1/2 cup olive oil
- 1/4 cup white-wine vinegar
- 1 tsp minced garlic
- 1 tsp minced fresh dill or fennel fronds
- 1/2 tsp toasted crushed fennel seeds
- 3/4 tsp salt
- Maple Balsamic:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tsp minced shallot
- 1 tsp pure maple syrup
- 3/4 tsp salt
- Sesame Ginger:
- 1/2 cup grapeseed oil
- 1/4 cup rice vinegar
- 2 tsp minced scallions
- 1 tsp minced fresh ginger
- 1 tsp sesame oil
- 1 tsp honey
- 3/4 tsp salt
- Cumin Lime:
- 1/2 cup sunflower oil
- 1/4 cup lime juice
- 2 tsp minced shallot
- 1/2 tsp toasted crushed cumin seeds
- 3/4 tsp salt
- Olive Orange:
- 1/2 cup olive oil
- 1/4 cup orange juice
- 2 tsp minced scallions
- 1 tsp minced pitted Kalamata olives
- 3/4 tsp salt
Directions

Pour 1/2 cup oil into a mason jar. Add 1/4 cup vinegar or citrus juice, 1-2 tsp minced garlic, ginger, scallion or shallot, 1/2 to 3 tsp flavoring (see combos above) and 3/4 tsp salt. Shake it up and you’re done!
