Ingredients
- 1 frozen cauliflower pizza crust
- 1/4 cup prepared pesto
- 1 cup shredded mozzarella
- 1 chicken breast (see recipe), shredded
- 1 small head iceberg lettuce, chopped
- Prepped cauliflower (see recipe)
- 1 cup halved cherry tomatoes
- 4 jarred pepperoncini, sliced
- 1/4 cup chopped pepperoni
- 2/3 cup Italian dressing (see recipe)
Directions

Prepare cauliflower crust as directed. Spread pesto over it. Top with mozzarella and chicken. Bake as directed.

Meanwhile, combine lettuce, cauliflower, tomatoes, pepperoncini and pepperoni in a large bowl. Just before serving, toss with dressing.

Cut the pizza into wedges and serve with salad.
